Cacao Husk Liqueur

Cacao husks are the shells surrounding cacao beans, separated from cacao nibs during production, which are historically discarded. Husks retain a lot of flavour and can be used to make delicious cacao tea or liqueur.

For this Cacao Husk Liqueur, we've taken single origin husks from Mörk Chocolate, a local artisan chocolatier, and macerated them with a blend of our Straight Rye Whiskey and Solera Rye. The Straight Rye Whiskey lends fruit and vanillin aromatics, while the Solera Rye complements the darker, more savoury profile of the cacao husk.

Best enjoyed cold, on the rocks or in The Gospel Brooklyn. Drink after dark.

Cacao Husk Liqueur is a celebration between The Gospel and Mörk Chocolate.

Like all good artisans, Mörk roast in small 15kg batches on a vintage ball roaster - a process that allows the inherent flavours of their unique and bold cacao to shine.

After the vintage ball roaster winnows the shell to separate the cacao nibs, the discarded husk is saved for our liqueur while the nibs go on to become extraordinary chocolate.

The Chuno cacao is a Trinitario variety that is heirloom certified from northern Nicaragua of the San Jose de Bocay region, specifically from the October-November 2021 harvest.

After the discarded cacao husk is macerated with The Gospel rye, the liqueur results in a flavour profile of dried orange, dark chocolate, roasted hazelnut, cranberry, spearmint, creme caramel, orange blossom and apricot preserve.
