For this release, we partnered with the fine folk at Melbourne cocktail bar Apollo Inn, the sister venue to well-respected Gimlet restaurant.

We wanted to honour their renowned level of hospitality by creating an equally refined whiskey. High Wheat is the result and together, it is our ode to Melbourne.

This single cask was double barrelled for 3 years and is a defining example of a high wheat rye whiskey. It was distilled from a mash bill of 63% Mallee Rye, 31% Malted Wheat and 6% Malted Barley.

A word on our collaboration

Opening its doors in June, Apollo Inn is a new small cocktail bar from the team behind Gimlet. Gimlet has quickly become one of those places that feels like it has always been a part of Melbourne’s fabric, yet is impressively only a few years young.

We partnered with the Apollo Inn team to help celebrate the opening of their venue. With partnerships, our focus has always been to work alongside those we admire and that embrace a similar ethos to our own.

The result is highly aromatic, with notes of toffee apple, toasted chestnut, salted caramel, Mirabelle plum and cherry wood.
